Vegetable Samosas


2 cups flour

1/2 tsp salt

2 tbsp butter

1/2 cup water (or more as needed)


2 1/2 tbsp butter

1 onion, diced

3 cloves garlic, minced

1/2 cup baby carrots, chopped

1 large potato

1/4 tsp cinnamon

1/3 tsp ground ginger

2 tsp curry powder

1/8 tsp black pepper

1/8 tsp cumin

Salt to taste

1 1/2 tbsp water

Quart of oil (for frying)


In a bowl, mix together flour, salt, and butter until mixture resembles coarse crumbs.  Gradually add water (enough to make smooth dough)  and knead until elastic.  Set aside.  Allow oil to heat (on low) in large pan.  Melt butter in saucepan, over medium heat.  Add onions and garlic, and cook until light golden in color.  Stir in seasonings.  Add vegetables, sprinkle about a tbsp of the water over, and cook until tender.  Separate dough into as many pieces as desired (about 10-15) and roll into flat circles.  Cut circles in half to form semi circles, and fill the middle of these circles with about 2 tsp of vegetable filling.  Brush edges with remaining water, and seal.  Fry in preheated oil (about 350 degrees) for 10 min or until golden brown on both sides.  Carefully remove with slotted spoon, and drain on paper towels.  Serve hot.
